Garlic Bacon Olive Pasta Something-er-other

I've been told I have to wear a mask or stay at least 5 feet away from Michael.  That being the case, it's time for cooking with garlic!

We haven't had refrigeration in some time, so I've been doing  a lot of cooking with items that don't require it.  I had some Spaghetti, so I started with that.  I also had garlic cloves, a jar of real bacon bits, a snack size can of black olives, and a small bottle of grated Parmesan cheese (unopened).  I've been looking for a block of Parmesan cheese, but the small grocery stores in the area don't carry it.  Sometimes you just have to use what's available at the homestead.

Cooking for one person can be challenging.  Spaghetti (or any pasta) is a good choice. Dried and uncooked Spaghetti the size of a quarter, will yield about a cup of cooked pasta.

While cooking the Spaghetti, I chopped up a clove of garlic and added it to some olive oil. When the Sphegetti is cooked, I simmer the garlic while also adding some dehydrated minced onion (I didn't have fresh) and a generous amount of real bacon pieces.  I sliced up the snack can of black olives, then added the garlic/bacon mixture and olives to the Spaghetti. I topped it off with a *little* sea salt, freshly ground pepper, and Parmesan.

It tastes *much* better than it looks!

I had a cup of mint tea to complement this dish... but it would also love to be flattered by a glass of wine. ~grin~

  6. Oh, poor Mike! Hospital food--ugh! That will motivate him to get out of there fast, though.

  7. I just dropped by to thank you for following my blog, and what a surprise to find we're neighbors! If I'd known Mike was in the Parker hospital, I'd have honked on my way by this morning ;-) I suppose you already know we live in Bouse.

  9. Well, we're back in Taj now... but there are some "issues" (and changes) we'll be talking about soon. We sure do appreciate all of your support, here and at Vantramps. Thank you so much!

  10. Annie's Granny, that is so great! This is the third really crazy internet coincidence we've had on our journey this year! The first one... I joined a farm blog that turned out to be our next door neighbor in Port Angeles, WA. Then, I found out that another blog I follow was my fiend's neighbor in Truth or Consequences, NM (and we sort of ran into them when we were there). Now this.

I joined your blog because of your gardening in Washington State. I've been dreaming of next season's garden and that's why I joined your blog (well, that and your cute hat) ~grin~. I had no clue that you were in Bouse! We've been boondocking just outside of Bouse. We were right next to the park on Plomosa (across from the landfill) right before we ended up in the hospital.

I'm really looking forward to following your blog... when you're in Washington and Arizona! And welcome to Vansteaders!

  11. You were within walking distance of me! If you go into Bouse on Plomosa, and continue straight ahead across the railroad tracks, you're within about 2-1/2 blocks of us. Are you still camped at the hospital in Parker?

  12. Oh yes, we went to look at the tank and such... I had also planned to ride my bike to the museum, but didn't get the chance. If I understand, I bet you're close to the museum. I really like Bouse!

We're out of the hospital now... but have some ongoing health related issues. we'll be blogging about this soon. We're still in Parker now... but that will be changing.

  13. If you walk out the front door of the museum and go straight ahead down the alley, cross Short street and continue down the alley, you'll pass behind my carport and be standing by my back door. You could holler at me from the museum, and I'd probably hear you ;-)
